This tart came from a morning after — one of those fog-draped sunrises that sort of peels your eyelids back from the inside. I’d driven north with a woman I barely knew and her dog, who definitely hated me.

We camped somewhere between intentional and accidental. The night ended with a disagreement about hot sauce philosophy. In the morning, while she meditated with kelp, I made this.

She said it reminded her of a forgotten language. The dog licked my foot. I took that as forgiveness.

A rustic tart of goat cheese, fresh herbs, and golden pastry — perfect for beachside picnics or unresolved emotions. Season: Early autumn or long, coastal evenings

Ingredients

Instructions

  1. Preheat oven to 400°F. Line baking sheet with parchment.
  2. In a bowl, mix goat cheese, ricotta/yogurt, egg, garlic, lemon zest, herbs, salt and pepper.
  3. Unroll puff pastry onto parchment. Score a 1-inch border around the edge.
  4. Spread filling inside the border.
  5. Brush edges with olive oil.
  6. Bake 22–25 minutes until puffed and golden.
  7. Cool slightly before slicing. It’s better that way.
